Nothing fancy here. Just one of my favorite go-to lunches.
Salad (serves one):
2 cups mixed greens
1/2 Braeburn or Gala apple, thinly sliced
1/3 cup pecans, lightly toasted
1/4 cup (or however much you like) crumbled gorgonzola
Handful of sliced grape tomatoes
1 tbsp stone ground mustard
1 tbsp water
1 tbsp honey
1 1/2 tbsp apple cider vinegar
2 tbsp olive oil
Salt & Pepper to taste
Combine ingredients and drizzle a tablespoon or two on top of salad. You will have leftover dressing.
